Calabrese Tomato Soup
Featuring Calabrese Pesto Mix and Onion Garlic Rub.
Ingredients:
1 kg/2 lbs tomatoes
3 brown onions peeled cut in half
1 large red pepper, cut in half & seeded
1/2 – 1 cup cream/vegetable stock
3 tbsp Calabrese Pesto Mix
2 tsp Onion Garlic Rub
Directions:
For richer flavor, bake tomatoes, onion, and pepper with 1 tbsp Calabrese Pesto Mix sprinkled on top. Bake on low for 2 hours.
Remove from oven. Place in blender with extra Calabrese Pesto Mix and Onion Garlic Rub. Blitz to consistency of your liking. Add cream or vegetable stock (amount will depend on how thick you like your soup). Stir.
Reheat on low in saucepan, add cooked bacon if desired. Serve immediately. Top with cheese & enjoy!
