Parmesan & Basil Muffins

Parmesan & Basil Muffins

Featuring Pomodoro Basil Mix, Seasoned Salt or Porcini Salt, and Spiced Fig, Maple & Pear Balsamic Vinegar.

Ingredients: 

2 cups self-raising flour
1 tsp baking powder
1/2 cup firmly packed basil leaves, finely chopped
2 tbsp Pomodoro Basil Mix
2 tbsp Spiced Fig Maple & Pear Balsamic
Good punch of Seasoned Salt or Porcini Salt
1/2 cup finely grated parmesan cheese (feta is also really good)
1/4 cup grated cheddar cheese
3/4 cup milk
1/2 cup melted butter
2 eggs

Directions:

Preheat oven to 200/390. Prepare muffin tins or pie tin. Sift flour and baking powder into a bowl,  then stir in basil, Pomodoro Basil Mix, and cheeses. Whisk butter, milk, eggs & Spiced Fig, Maple & Pear Balsamic in a separate bowl. Add to dry ingredients. Stir until just combined. Pour mixture into muffin tray or pie maker. Bake for 8-10 mins for muffins or 6 mins in pie tin. Serve warm or cool as part of a meal or a great tasty snack.
