Ghee or butter
Place chicken breasts and Fajita Spice in plastic bag; toss to coat. In meaty part of chicken, slice 3/4 of the way through. This will also help when checking to see if chicken is fully cooked.
Brush BBQ grill with ghee/butter. Place chicken, sliced side down, on grill. Turn and put cheese into chicken slits. If your BBQ has a lid, lower lid to help cheese melt. If not, place a heatproof pan over chicken. Serve with salad, dressing, and more corn tortillas.
