Featuring Spanish Paella Spice and Spiced Fig Maple Pear Balsamic Vinegar.
500 g/1 lb red capsicum/pepper
1 tsp mustard seeds
1 red onion, thinly sliced
2 cloves of garlic, chopped
2 tsp Spanish Paella Spice
1/4 cup Spiced Fig Maple Pear Balsamic Vinegar
1/2 cup red wine vinegar
1 apple, cored, peeled and grated
1/2 cup soft brown sugar
Remove the capsicum or pepper seeds and membrane. Slice thinly. Combine the capsicum, mustard seeds, onion, garlic, vinegar, apple, and spice into a large pan. Simmer for 30 minutes until the capsicum is soft.
Add brown sugar and stir over low heat until completely dissolved. Simmer, stirring occasionally for an hour or until the relish has reduced and thickened.
Bottle and serve with zucchini and haloumi fritters, cheese platters, or add a little zing to your favorite ground beef dishes.
