Spicy Zucchini and Haloumi Stack
Featuring Spicy Cajun Mix and Cinnamon Blend Baking Spice.
Ingredients:
1/2 cup almond/coconut flour
1/2 tsp baking powder
1 egg
1/3 cup water
3 zucchini, coarsely grated
2 green shallots, trimmed, thinly sliced
1/4 cup fresh mint & parsley, chopped
1 tbsp Spicy Cajun Mix
1/4 tsp Cinnamon Blend Baking Spice
2 tbsp ghee
250 g/9 oz haloumi
Directions:
Whisk flour and baking powder. Make a well in the center and add egg. Gradually add water, whisking to form a batter. Add zucchini, shallots, parsley, mint, Spiced Cajun Mix and Cinnamon Blend Baking Spice.
Heat ghee in large pan over high heat. Cook 1/4 cup of mix in the ghee til cooked on each side. Set aside.
Slice haloumi and cook. Stack layering the zucchini fritters and haloumi. Serve with salad greens and relish.
