Bacon and Egg Cups

Featuring Porcini Salt, California Onion Mix, or Garlic Mix, or Calabrese Pesto Mix

Ingredients:

6 slices large shortcut bacon
4 eggs
1/2 cup grated cheese
1 1/2 cups diced/shredded vegetables; I used red capsicum/pepper, baby spinach, red onion
Good pinch Porcini Salt
1-2 tbsp California Onion Mix or Garlic Mix or Calabrese Pesto Mix
1/2 cup cream

Directions:

Heat oven to 180/350. Line muffin tray with bacon. If not using silicon, grease first.

In a bowl whisk eggs, add other ingredients and mix well. Scoop mixture into bacon in muffin tray. Cook for 25-30 mins or until cooked. Time will vary slightly.

Enjoy with salad or simply as a grab and go snack. Perfect for using leftover vegetables, so mix it up with what you have in your fridge.
