Italian Almond Biscuits

Italian Almond Biscuits (Ricciarelli)

Features Cinnamon Blend Baking Spice and Orange Cranberry Balsamic Vinegar


3 cups almond meal
1 1/4 cups caster or superfine sugar
2 egg whites
Icing/powdered sugar
1-2 tsps Cinnamon Blend Baking Spice
1 tbsp Youngevity Be the Change Coffee (ground)
1 tsp Cranberry Orange Balsamic Vinegar


Preheat oven to 180/350. Line a baking tray.

Mix together the almond meal, sugar, ground coffee, and Cinnamon Blend Baking Spice. Add egg whites and Cranberry Orange Balsamic Vinegar; mix thoroughly (using your hands is the best). Take small pastry pieces and form into rectangles. Dust with icing sugar to coat well, then place in lined baking tray with room in between for spreading.

Bake for 10-12mins or until cookies look slightly marked and the bottom is firm. Cool on a rack. Serve with your favourite Youngevity Be the Change Coffee and a friend. Quick, easy, and tasty. Enjoy!
