Gluten-Free Smoky Mac ‘n’ Cheese
Smoky Mac ‘n’ Cheese
Featuring Low n’ Slow BBQ Spice.
350g/12oz gluten-free macaroni*
6 rashers hickory smoked bacon, coarsely chopped
2 tbsp butter
2 tsp Low n’ Slow BBQ Spice
1/3 cup all purpose flour
3 cups milk
1/2 cup finely grated Parmesan
4 spring onions, thinly sliced
1 small red capsicum/pepper, blackened, peeled and diced
2 cups grated cheddar cheese
Cook the macaroni in a large pan of boiling water following packet directions. Drain well. (To save on dishes, once pan is drained use the same pan to cook the rest of the meal) Meanwhile, heat a large saucepan over medium heat. Add and cook bacon, stirring until crisp. Using a slotted spoon transfer to a bowl to set aside.
Add butter to the pan and stir until butter melts. Add Low n’ Slow BBQ Spice, stirring until combined. Add the flour and cook until slightly grainy – approx 1 min. Add the milk and use a whisk to stir until well combined. Cook using a wooden spoon for 5-7 mins or until mixture boils and thickens. Remove from heat. Stir in Parmesan, spring onion, capsicum/pepper and 3/4’s of the cheddar. Season and stir through gently bacon and pasta.
*Note: Gluten-free pasta does tend to be a little more brittle so take care when stirring. Spoon into a baking tray or individual dishes. Top with remaining cheese and bake or grill until golden and heated through. Try our gluten-free pastas from GoFoods Premium.
