Tazza Di Vita Sugar Cookies


1 c. butter, softened
1 1/2 c. granulated sugar
2 eggs
2 Tbsp. Tazza Di Vita Coffee
1/2 tsp. vanilla
2 1/4 c. gluten free flour
1 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. salt


With mixer, cream butter and sugar. In a separate, small bowl, combine eggs, vanilla, and coffee until well incorporated. In a separate bowl, combine flour, baking powder, cinnamon, and salt; mix well.

Slowly add egg mixture to butter mixture until well combined. Slowly add flour mixture until fluffy; do not over beat. Cover dough and chill for at least 1 hour; overnight is better.

Preheat oven to 350 degrees. Roll tsp of dough into a ball; flatten with a spoon. Bake for 10-15 minutes, or until golden brown.
