Thai Chicken Curry

Featuring Thai Mix


Whole chicken cut into pieces or chicken thighs
2 brown or yellow onions, peeled and cut into 8ths
1 can coconut cream
1 tbsp fish sauce
2-3 tbsp Thai Mix
2 tbsp coconut/brown sugar
1 bag baby spinach
Rice or cauliflower rice to serve


Put all your ingredients except spinach and rice into slow cooker. Cook on high for 2-3 hrs or 4-5 hrs on low. Cook rice; set aside. Add spinach to slow cooker; stir. Serve immediately with rice. Enjoy!

I love a set and forget it meal and have to say, this Thai Chicken Curry was incredibly good. Did I mention easy and tasty.
