Tropical Curried Chicken Salad

Make this salad mix in advance so it has time to chill before adding it to a plate of lettuce or making a sandwich. You can grill the chicken so you don’t heat up the house. Or for days when you’re short on time, grab a rotisserie chicken from the store. If you don’t have the Downunder Grill Rub swap it with Montreal Steak Rub or Southern Style Dry Rub.
